- Begin by crushing your digestive biscuits into a fine crumb.
- Melt your butter in the microwave, heating it in 30-second intervals until fully melted. Then, pour the melted butter over the crushed biscuits and mix until thoroughly combined.
- Transfer the biscuit mixture into your 8-inch cheesecake tin, ensuring to spread and press it down firmly with the back of a spoon to create a smooth and even layer.
- Place the tin in the fridge while you prepare the filling.
- Melt your white chocolate and set it aside to cool slightly.
- In a large mixing bowl, combine the cream cheese, icing sugar, and vanilla extract until smooth and creamy.
- Gradually fold in the melted white chocolate until fully incorporated into the cream cheese mixture.
- Once the chocolate is well combined, add the double cream and continue mixing until the mixture thickens to a smooth consistency.
- Pour the filling over the chilled biscuit base in the cheesecake tin, using a spatula to spread it evenly and create a level surface.
- Return the cheesecake to the refrigerator and allow it to set for a minimum of 5-6 hours, ideally overnight, to ensure it firms up properly.
