150g Butter
400g Digestive biscuits
400g Milky Bar chocolate
600g Cream cheese
100g Icing sugar
1 tsp Vanilla
350ml Double cream

Method

  1. Begin by crushing your digestive biscuits into a fine crumb.

  2. Melt your butter in the microwave, heating it in 30-second intervals until fully melted. Then, pour the melted butter over the crushed biscuits and mix until thoroughly combined.

  3. Transfer the biscuit mixture into your 8-inch cheesecake tin, ensuring to spread and press it down firmly with the back of a spoon to create a smooth and even layer.

  4. Place the tin in the fridge while you prepare the filling.

  5. Melt your white chocolate and set it aside to cool slightly.

  6. In a large mixing bowl, combine the cream cheese, icing sugar, and vanilla extract until smooth and creamy.

  7. Gradually fold in the melted white chocolate until fully incorporated into the cream cheese mixture.

  8. Once the chocolate is well combined, add the double cream and continue mixing until the mixture thickens to a smooth consistency.

  9. Pour the filling over the chilled biscuit base in the cheesecake tin, using a spatula to spread it evenly and create a level surface.

  10. Return the cheesecake to the refrigerator and allow it to set for a minimum of 5-6 hours, ideally overnight, to ensure it firms up properly.
